BK_MINIFIGURES_FOLDER default value is minifigs but is minifigures everywhere else (env.md , quickstart.md, compose.yaml, etc.)

I'll fix this with V1.3. I'm ramping up for a bigger release. I completely agree with the issue. The detault value is a leftover of my first version, where i called them minifigs.
